Perfectly grilled BBQ steaks start with a hot sear… cook for 1–2 minutes on each side over high heat to seal in the flavour and create a golden crust. Lower the heat to medium or move the steaks to the cooler side of the grill to ensure gentle, even cooking. Use a meat thermometer to monitor the internal temperature, aiming for 52 – 54°C for medium-rare or 60 – 63°C for medium. Always rest the steaks for 5 minutes after grilling to ensure maximum tenderness and juiciness!
