For best results, roast until the centre reaches 75°C, then rest before carving to keep it juicy and tender.
It’s delicious served hot with all the trimmings, in a curry or sliced cold the next day for sandwiches, and we’d recommend brushing it with butter, seasoning generously and adding a few sprigs of fresh herbs before roasting to really bring out the flavour.
