Sirloin steaks are at their best when cooked quickly over high heat. Take them out of the fridge around 30 minutes before cooking so they reach room temperature, season generously with salt and pepper, and sear in a hot pan or on the grill for a rich crust. Let the steaks rest for a few minutes before serving to lock in the juices and deliver that restaurant-quality tenderness at home.
