Pigeon has a rich, gamey flavour with a slightly earthy, almost wild taste. It’s a bit like duck but leaner and more intense. And yes, it’s safe to eat!
Pheasant breasts can dry out if overcooked, so we’d recommend that you keep it simple and quick. Start by seasoning well and pan-frying in a little butter or oil for around 3-4 minutes per side, then rest for a few minutes before slicing to keep the meat tender and juicy.
Yes – venison is naturally lean, so it’s best served medium-rare to keep it tender. Cook it quickly over high heat and rest before slicing, and you should aim for an internal temperature of around 52-57°C. Treat it like a good beef steak, sear it well on the outside while keeping the centre pink and juicy.
Game meat comes from wild animals like deer, pheasant, partridge and pigeon. It’s naturally lean, high in protein and has a deeper, more robust flavour compared to farmed meats. Because the animals are raised in the wild or on game reserves, the meat has a distinctive taste, perfect if you’re after something a bit different for your dinner table!
Partridge is one of the milder game meats where it’s light, slightly sweet and less gamey than pheasant. The meat is tender with a delicate flavour, almost like a cross between chicken and quail.
