With a fully in-house team, our butchery department has over 1000 years combined experience, in which they hand cut approximately 7000 steaks, process over 18 tons of beef, lamb and pork carcasses, and trim over 4 tons of pork bellies and loins for our own famous dry cured bacon production every week!

A bone-in leg of lamb is perfect for roasting! We recommend seasoning simply with rosemary and garlic, roasting at 180°C for about 25 minutes per 500g plus an extra 25 minutes, and resting before carving.
