About The Cut
Pork Fillet
Pork fillet, also known as pork tenderloin, is the most tender cut of pork (hence the name!) and lies inside the ribs along the length of the loin. It is lean and mild in flavour, making it ideal for quick cooking methods such as grilling, roasting or pan-searing (be careful not to overcook it). Best cooked to medium for a juicy and tender cut of meat, pork fillet is perfect for roast dinners and everyday meals!

Owton’s Top Tips!
After something lean, tender and seriously versatile? Our Pork Fillet (min 350g), also known as pork tenderloin, is one of the finest cuts of pork you can buy! With minimal fat and a naturally tender texture, it cooks quickly and works beautifully in everything from stir-fries and roasts to medallions and wellingtons.
For best results, sear the whole piece in a hot pan to lock in flavour, then transfer to a preheated oven at 180°C for 15–20 minutes, or until the internal temperature reaches 70°C. Rest for 5–10 minutes before slicing to keep it tender and juicy.
This cut is incredibly versatile, just slice into strips for Asian-inspired dishes with garlic, soy, and honey, or try stuffing and wrapping it in bacon for a more indulgent option.
Keep refrigerated for 2–3 days, or freeze on arrival to enjoy later. It’s quality you can rely on, with flavour you’ll come back for.
Pork fillet, also called pork tenderloin, is a smaller, more delicate cut that comes from the muscle along the pig’s backbone. It’s leaner and more tender than pork loin, making it ideal for quick cooking or slicing into medallions for elegant dishes.
Because it’s very lean, pork fillet cooks quickly and benefits from a short, hot cook followed by resting. Pan-sear it on all sides, then finish in a 180°C oven for 15 to 20 minutes depending on thickness. Let it rest for 5 minutes before slicing to retain moisture.
Pork fillet is great for stir-fries, roasts, and stuffing. You can slice it into medallions and serve with creamy sauces, wrap it in pastry for a pork Wellington, or marinate and grill it for lighter meals. It’s also delicious paired with fruit-based glazes like apple or apricot.
Yes, pork fillet freezes very well. If you’re not using it immediately, freeze it on the day of delivery. Defrost in the fridge overnight and cook within 24 hours of thawing. For best results, avoid refreezing once defrosted.
