Ultimate chilli recipe

Chilli con carne is a classic comfort food that can be used for many different occasions. It can be cooked up for a family feast, added to burgers at a BBQ, served up at parties, or dolloped on a big bowl of nachos for a snack in front of the TV! It’s also one of our favourite jacket potato toppings.

Chilli con carne is the perfect dish for making a big pot in advance. You can ramp up the heat if that’s what you like, or make it less hot if you prefer it on the milder side. Delicious.

If you are looking for a chilli recipe that really cranks it up a notch, this ultimate chilli recipe will be the one for you!

What makes our chilli recipe so ultimate? We believe meat that is of the highest quality, made without using any harmful chemicals, makes for the most delicious meals. That’s why this recipe uses our steak mince, which is made using our cattle who are raised on a healthy diet of grass and grain. That’s what makes the ultimate chilli con carne.

COOK: 1 hour

SERVES: 4

INGREDIENTS:

  • Ingredients

      • 1 tbsp oil

      • 1 large onion

      • 2 cloves of garlic

      • 1 red pepper

      • 150 ml red wine – a merlot would be perfect

      • 2 tbsp tomato purée

      • 1 400g can of chopped tomatoes

      • 1 can of red kidney beans or black beans

      • 1 tbsp hot chilli powder

      • 1 tsp paprika

      • 1 tsp ground cumin

      • A splash of Worcestershire sauce

      • 300 ml of beef stock

      • 10g of good-quality dark chocolate

      • 1 tsp oregano

      • 2 bay leaves

    Optional extras

      • Sour cream

      • Lime wedges

Method

  • First up, get your veggies prepped. Dice the onion, finely chop the garlic, and chop the red pepper.
  • Get a large pan on the hob on a high heat and add the oil.
  • After 1 or 2 mins, when the oil is hot, add the onion and turn the heat down. Stir regularly and simmer for about 5 minutes, or until the onions are soft.
  • Once the onions are cooked, add the chopped garlic, and all the spices and give it a good stir.
  • After a couple of minutes, turn the heat up and add the steak mince – you want it to sizzle and fry rather than stew. Break it up with a wooden spoon so it cooks evenly.
  • Once the mince is browned, and there are no more lumps or pink bits, turn the heat down to medium and slowly add in the wine and beef stock, stirring continuously as you add it in.
  • Add the drained kidney beans, Worcestershire sauce, tomatoes, oregano, tomato purée, and give it a stir.
  • Season with salt and black pepper to taste and add in the chocolate at this stage too.
  • Add a couple of bay leaves, stir, then pop a lid on the pan and let it simmer over a low heat for around 45 minutes.
  • The chilli is cooked when the sauce is nice and thick and the steak mince is tender.
  • Ultimate chilli tip: To make this chilli recipe go one step further, cook it the day before you plan to serve it and keep it in the fridge overnight. Trust us, this gives the chilli time for all the flavours to maximise and get to know each other!

This is where chilli really sets itself apart from other meals. You can use it in so many different ways! You can serve it up with rice, nachos, jacket potatoes, burritos, or even make your own hearty portion of chilli-cheese fries! Can I make chilli con carne in a slow cooker?

Yes! Chilli made in the slow cooker is an excellent winter favourite. Simply add the cooked beef to the slow cooker and leave it for the flavours to permeate, stirring occasionally.
