Spice-rubbed Chicken Thighs with Tangy Yoghurt Sauce is an Asian dish that combines the bold flavours of aromatic spices with the creamy tang of yoghurt to create a hearty weekend meal.

INGREDIENTS:

  • Ingredients:

    • ½ teaspoon ground cinnamon
    • ½ teaspoon ground coriander
    • ½ teaspoon ground cumin
    • ¼ teaspoon smoked paprika
    • ¼ teaspoon ground cloves
    • ¼ teaspoon ground turmeric
    • 3 teaspoons salt
    • 8 boneless, skinless chicken thighs
    • ½ cup natural Greek yoghurt
    • 2 tablespoons mayonnaise
    • 1 large clove of garlic
    • 3 tablespoons white wine vinegar
    • 1 ½ pounds of juicy tomatoes
    • 1 tablespoon of fresh oregano leaves
    • ¼ teaspoon freshly ground black pepper
    • ¼ cup of olive oil
    • 1 red onion, sliced into ½-inch pieces
    • Naan bread, for serving

Instructions

1. Combine ground cinnamon, coriander, cumin, paprika, cloves, turmeric, and salt. Rub the spice mixture onto boneless chicken thighs.

2. Mix Greek yoghurt, mayonnaise, grated garlic, and white wine vinegar to create a tangy sauce.

3. Toss quartered tomatoes with oregano, black pepper, olive oil, and vinegar.

4. Sear the chicken thighs until browned and cooked through.

5. Caramelised sliced red onions in the same pan.

6. Shred the cooked chicken and transfer it to a serving platter along with caramelised onions.

7. Sprinkle with fresh oregano leaves.

8. Serve with the yoghurt sauce, cucumber, tomato salad, and warm naan bread.
