INGREDIENTS:

  • 6 chicken thighs (skinless and boneless, or skin-on if preferred)
    1 tablespoon olive oil
    1 teaspoon salt
    ½ teaspoon black pepper
    1 teaspoon paprika
    Pinch of chilli flakes (optional)
    3 to 4 garlic cloves, finely chopped
    100g sun-dried tomatoes, chopped
    250ml chicken stock
    200ml double cream
    40g grated parmesan (plus extra for serving)
    1 teaspoon dried oregano or Italian seasoning
    Fresh basil or parsley, chopped (for garnish)
