INGREDIENTS:
2 tablespoons olive oil
1 onion, chopped finely
2 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
½ teaspoon chilli powder (optional)
500g diced turkey
300ml chicken stock
1 can coconut milk (400ml)
1 red pepper, diced
1 can chickpeas, drained and rinsed (400g)
Salt & pepper to taste
Lime wedges for garnish (optional)
1. Heat the olive oil in a large pan over medium heat. Add the onions and garlic and sauté until fragrant.
2. Add the spices (cumin, turmeric, coriander, chilli powder) and stir until combined with the onions and garlic.
3. Add the turkey and stock to the pan and bring to a boil. Simmer for 15 minutes or until the turkey is cooked through.
4. Reduce the heat to low and add in the coconut milk, red peppers, chickpeas, salt & pepper. Simmer for additional 10 minutes or until the sauce thickens slightly.
5. Serve with rice or naan bread and garnish with fresh herbs and lime wedges if desired. Enjoy!
