One of the most popular steaks in the world is the rib-eye, also known as scotch fillet. It comes from a very specific muscle in the animal, one that goes down the spine and does very little action, giving it a lovely soft texture later down the line. The excellent patterns that the layers of fat running through the flesh create (including an ‘eye’ of fat in the centre, which is why the steak is called just that), melts into the steak when it’s cooked, and that’s really what makes it really stand out. This gives the meat a more hearty flavour as well as a juicy, soft feel.
