Pat the wings completely dry before seasoning. Roast or grill them at a high heat, placing skin‑side down initially to seal in juices. You can also use a light coating of oil or baking powder in your rub to help draw moisture from the skin and enhance crispiness.
As a rough guide: bone‑in wings typically take 35–45 minutes at about 200 °C (400 °F), turning midway for even browning. Boneless wings will cook faster (around 20–30 minutes, depending on size). Always check that the internal temperature reaches 75 °C (165 °F) before serving.
