About the Cut

Beef Brisket

A significant cut from the breast or lower chest of a cow, beef brisket is known for its toughness, due to the frequent movement of this particular muscle. Thanks to its fat and connective tissue, brisket is known for being one of the finest barbecue meats making it great for slow roasting!

Owton’s Top Tips!

After melt-in-the-mouth beef that’s packed with rich, slow-cooked flavour? Our 1.9–2.1kg Beef Brisket is just the ticket. This cut comes from the lower chest of the animal and is ideal for low and slow cooking. Whether you’re roasting it in the oven, smoking it on the BBQ, or slow-cooking in a Dutch oven, give it time (we’re talking hours) and it’ll reward you with fork-tender beef and incredible depth of flavour.

For best results, season generously with your favourite spice blend (have you tried Billy’s Steak Rub?). Cover tightly and cook low and slow for around 140–150°C for 4–5 hours, or until the brisket is meltingly tender! Allow it to rest before slicing or shredding. Ideal for hearty Sunday roasts, batch cooking, or serving up sliders with slaw for a crowd. Store leftovers in the fridge for up to 3 days, or freeze for future tasty meals.

What is the best way to cook beef brisket?

The best way to cook beef brisket is low and slow, either in the oven, on the barbecue, or in a slow cooker. This cut comes from the breast of the cow, so it contains plenty of connective tissue and benefits from long, gentle cooking to become meltingly tender. Season generously, brown the brisket for depth of flavour, then braise it with stock, herbs, or your preferred BBQ marinade. For outdoor cooking, smoked brisket over indirect heat can be a real showstopper.

Is beef brisket hard to cook?

Brisket isn’t hard to cook, but it does require patience and the right cooking method. It’s a tougher cut by nature, so it won’t work well with quick frying or grilling. However, once you understand the value of slow roasting or braising, it’s a forgiving cut that delivers incredible flavour and texture. Just allow plenty of time and don’t rush it.

Can I cook a whole beef brisket in the slow cooker?

Yes, a whole beef brisket is ideal for the slow cooker. The consistent low temperature helps break down tough fibres and renders the meat beautifully soft. Cook it on low for 8–10 hours or high for 5–6 hours, depending on size. Add onions, garlic, stock or wine, and let the slow cooker do all the work for a brilliant method for hands-off cooking with maximum flavour.

How long do I need to cook a whole beef brisket?

Cooking time depends on the size of the brisket and your method. As a general guide:

  • Oven (low and slow): 160°C (fan) for around 3–5 hours

  • Slow cooker: 8–10 hours on low, or 5–6 hours on high

  • BBQ/Smoker: 8–12 hours at 110–120°C, depending on weight

The key is to cook until the meat reaches an internal temperature of 90–95°C and becomes fork-tender. Don’t rush it – brisket rewards time and care.

Is beef brisket healthy?

Brisket is a relatively lean cut once excess fat is trimmed, and it’s high in protein, iron, zinc and B vitamins, which are essential for muscle repair and energy. Like all red meat, it’s best enjoyed as part of a balanced diet. For a lighter take, try slow-cooked brisket with fresh seasonal veg or a crisp salad rather than rich gravies or rolls.

What cut of meat is beef brisket?

Beef brisket comes from the lower chest or breast section of the cow. It’s a hardworking muscle with lots of connective tissue, which makes it tough when undercooked but beautifully tender and rich when slow-cooked or smoked. At Owtons, our brisket is expertly prepared by our in-house butchers for maximum quality and flavour.

How do I smoke beef brisket?

To smoke a brisket, you’ll want to cook it low and slow over indirect heat, typically around 110–120°C (225–250°F). Use wood chips like hickory, oak or applewood for authentic smoke flavour. Trim any excess fat, season with a dry rub, and smoke for 8–12 hours depending on size. Wrap the brisket in foil partway through to retain moisture. Rest it for at least 30–60 minutes before slicing.

Can you freeze beef brisket?

Yes, beef brisket freezes very well, both raw and cooked. If freezing raw, wrap it tightly in butcher’s paper or vacuum-seal it to prevent freezer burn. For cooked brisket, let it cool fully before portioning and freezing in airtight containers. It will keep for up to 3 months in the freezer and reheats well, especially in a little stock or its own juices to retain moisture.
