- 4 large tortilla wraps
- 2-3 tbsp Nando’s peri peri sauce (medium or hot, as desired)
- 2 tbsp sweet chilli jam or sauce
- Mixed leaf salad (lettuce, baby spinach, rocket)
- 1/2 cucumber, thinly sliced
- 1 large tomato, sliced or a handful of cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- Optional: fresh coriander, sliced avocado
- Olive oil for frying
For the Garlic Yoghurt Mayo (optional):
- 3 tbsp Greek or natural yoghurt
- 2 tbsp mayonnaise
- 1 small clove garlic, minced
- 1 tsp lemon juice
- Salt and pepper to taste
For the Potato Wedges:
- 3 large potatoes, scrubbed and cut into wedges
- 2 tbsp olive oil
- 2 tsp peri salt (see below) or shop-bought peri salt
For Homemade Peri Salt Mix:
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (more to taste)
- 1/2 tsp onion powder
- 1/4 tsp dried oregano
- 1/2 tsp salt
- Pinch black pepper

Cooking Instructions
1. Prepare the Potato Wedges
- Preheat your oven to 200°C (180°C fan)
- We recommend skin on wedges for optimum flavour. So start by washing your potatoes and then slicing them in half. Once sliced, lay each half cut-side down and cut lengthwise into quarters. You can opt for chunky wedges with 4 slices or slimmer wedges with additional cuts.
- Once prepped, toss the wedges in a bowl with olive oil and peri salt until well coated.
- On a lined baking tray, evenly spread your peri salted wedges.
- Place in your preheated oven and bake for 30-35 minutes, turning halfway, until golden and crispy.

2. Prepare the Salad
- Assemble the salad ingredients: lettuce, spinach, rocket, tomato, cucumber, and red onion. For extra flavour or filling, you can also add sliced avocado and fresh coriander.
3. Fry the Halloumi
- Slice Owton’s halloumi into 1cm thick strips.
- Toss halloumi slices in 2tbsp of peri peri sauce (the level of heat is up to you).
- Heat a non-stick frying pan over medium-high heat and add a splash of olive oil.
- Fry the halloumi slices for 2-3min each side, until golden and crispy. Once perfectly grilled, set the cooked halloumi aside.

4. Make Garlic Yoghurt Mayo (Optional)
- Mix yoghurt, mayonnaise, minced garlic, lemon juice, salt and pepper for a perfect dipping sauce.

5. Assemble the Wraps
- Warm wraps in a microwave or pan for 20sec.
- Spread each wrap with garlic yoghurt mayo or a thin layer of sweet chilli jam.
- Layer mixed salad, cucumber, tomato, and onion.
- Add the peri peri halloumi.
- Drizzle with extra peri sauce and sweet chilli jam.
- Fold and roll the wrap tightly.
